We’re a family-owned business dedicated to the craft of venison processing for hunters in the Finger Lakes region. With care and precision, we clean, skin, cut, package, and freeze your harvest. We also offer specialty blends for hot dogs, burgers, and sausages, along with professional skull cleaning to help you preserve your trophy.

Everyone deserves access to quality processing so we are committed to keeping our prices fair. Each order is handled with attention to detail: from freezer-safe, vacuum-sealed packaging that extends the life of your meat and optimizes storage space, to the quickest turnaround time in the area.

Our excellence comes from Mark’s lifelong passion and laser focus on venison. Raised on a dairy farm, he learned the craft of butchery and hunting from his father and grandfather. What began as a way to put food in the freezer grew into a way to spend time with family, create memories, and simmer in the sights and smells of the woods. When retirement approached, Mark decided to turn his lifelong passion into a place of his own and built a 1940’s barn style deer processing facility. His goal is simple: to make everyone who walks through the door feel welcome, well cared for, and part of the fun, a place where folks keep coming back to share stories and bust each other’s chops.

Price List 

Deer processing time is 4-7 days for a general cut, and 1-2 weeks for specialty meat orders. Let us know if you are traveling and we will work with your timeline.

Any order that needs to be completed in 3 or less days from drop off.

 

General Cut $95

Includes: Back-Straps- choose from whole, cut into 1/2in

Medallions, or â…“ inch medallions 

Tenderloin Steaks- choose cut into ¾ in, or 1in

Roast- choose bone in, or bone out

Ground- packages in 1lb bags

Our Team

Mark’s vision is brought to life with the help of his son, Ben, and his longtime friend, Star.

​

Ben handles most of the skinning and lends a hand with cutting and wrapping during the busy season. Star keeps the operation running smoothly, she tackles the often messy  front shoulders, labels each package by hand, shapes the specialty meats, and keeps everything organized in the freezer. Meanwhile, Mark works as the master butcher, taking care of the back straps, tenderloins, and rear quarters .

 

Here are some of the team’s favorite ways to enjoy venison:

Mark- Venison bacon burger or a slow-cooked roast with potatoes, onions, and carrots.

Ben- Cheddar dogs.

Star- Medallions marinated in Italian dressing and cooked slowly over low heat.
